Hoy, les vamos a enseñar como hacer ricas palmeras de mantequilla de coco para disfrutarlas con la familia y los amigos. Están hechos con hojas de hojaldre con una deliciosa cobertura de coco: ideales para tomar a cualquier hora del día.
Ingredientes para 8-10 personas
- 500 gr. de masa de hojaldre congelada, refrigerada o hecha en casa
- Azúcar glas para laminar la masa
- 250 gr. de mantequilla
- 75 gr. de coco rallado + el necesario para rebozarlas
- 150 gr. de azúcar glas
- Huevo batido para pincelar las palmeras antes de hornear
Preparación:
1. En una superficie plana salpicada con azúcar glas, estirar la masa de hojaldre.
2. Rociar la masa con unas gotas de agua.
3. Dividir la masa en dos partes y enrollarla desde los bordes hacia el centro de tal forma que se obtendrán dos rollos de hojaldre de cada parte unidos.
4. Cortar las palmeras de 1 cm de grosor y colocar en una placa de horno forrada con papel o engrasada y enharinada.
5. Pincelar con huevo batido y hornear a 190º C, hasta que estén doraditas. Dejar enfriar. Mientras tanto trabajar la mantequilla que deberá estar en pomada con el azúcar glas y el coco, hasta obtener una crema. Reservar.
6. Cuando las palmeras estén frías, untar la mantequilla de coco, luego pasarlas por coco rallado y colocar en bandejas para comerlas.
