Ingredientes:
-Huachinango
- Aceite vegetal Cantidad necesaria
- Alcaparras 120 g
- Vino blanco 300 cc
- Mejorana 2 Rama
- Cebollas 2 Unidades
- Lomo de Huachinango 1 k
- Sal de mar A gusto
- Ajo picado 1 Cantidad necesaria
- Aceite de oliva 50 cc
- Jitomates caramelizados, guarnición:
- Jitomates 1/2 k
- Miel de abeja 200 g
- Vaina de vainilla 2 Unidad
- Preparación
1. Corte el lomo de huachinango en postas de aproximadamente 200 gramos cada una.
2. En una sartén con aceite vegetal caliente fría las alcaparras unos segundos, retírelas y escúrralas sobre papel absorbente.
3. Pele y corte las cebollas en fina juliana.
4. Pele los jitomates y quíteles las semillas, luego córtelos en láminas con forma de rectángulo.
5. En una sartén coloque las láminas de jitomate, incorpore la miel de abeja y las vainas de vainilla, cocine a fuego lento y mueva constantemente durante 5 minutos, luego retire del fuego y coloque los jitomates en un bowl, reserve.
